asian peanut curry

preparation time: 15 minutes
ingredients (two servings):
  • 150gram mie noodles
  • 2tbs oil
  • 1 small onion
  • 1 bell pepper
  • 8 mushrooms
  • 100gram frozen spinach
  • pepper
peanut curry sauce:
  • 2tsp red curry paste
  • 2tbs peanut mush
  • 200ml water
  • 1tsp vegetable stock
preparation:
  1. Put the noodles in a pot with boiling water, remove from the stove and let them soak for 4 minutes before you drain off the water.
  2. Peel and slice the onion, put it in a pan with oil and steam for one minute.
  3. Wash and slice bell pepper and mushrooms and steam them in the pan.
  4. Mix all ingredients for the sauce in a bowl and add them to the pan as well as the frozen spinach. Return the heat and let it cook for 5 minutes.
  5. Serve the noodles and vegan sauce on two plates.
If you like you can use rice or any other pasta instead of mie noodles.
