Brussels sprouts adventure

ingredients (for two servings):
soy-free, sugar-free
potato mash:
  • 300gram potatoes
  • 125gram Brussels sprouts
  • salt, pepper
  • 1tbs margarine
  • 125gram Brussels sprouts
  • 1 bell pepper
  • 1/2 orange
  • handful walnuts
  • 1tbs rape oil
  • 1tbs vinegar
  • 1tbs maple syrup
  • salt, pepper, curcuma, nutmeg
  • 1tsp fresh chopped ginger
potato mash + salad
  1. Peel the potatoes, slice them and put them in a pot with boiling water together with the washed Brussels sprouts. Cook them for 5-10 minutes at low heat.
  2. For the salad dressing you mix oil, vinegar, syrup, ginger and the spices in a bowl.
  3. Wash the bell pepper, slice it in small chunks and add it to the bowl.
  4. Peel the orange, slice it as well and add it to the bowl as well.
  5. When potatoes and Brussels sprouts are soft, strain off the water, add margarine, salt and pepper and mash it.
  6. Serve the potato mash together with the salad, topped with some walnuts.
