bulgur salad – fall edition

preparation time: 5 minutes
ingredients (for two servings):
  • 200 gram cooked bulgur
  • 25 gram lamb’s lettuce, washed
  • 2 handful fresh parsley, washed
  • 1 bell pepper, washed and sliced
  • 1 carrot, peeled and sliced
  • 1 apple, washed and sliced
  • 2 tbs Tahin (sesame mush)
  • 2 tbs walnut oil
  • pinch of salt and pepper

  1. Mix all salad ingredients except bulgur in a food processor and blend until the veggies are finely chopped (prevent that it ends up as a smoothie cause your blender has too much power).
  2. Stir in cooked bulgur and serve the salad in two bowls, topped with fresh parsley and sesame seeds (optional).

I love to use this salad for meal prep! You can easily cook bulgur in advance and store it in your fridge for 3 or 4 days. Then take 100 gram of it, grab your veggies, put all remaining ingredients in a blender and that’s it! So simple and so tasty! Thanks to the apple it has a very fresh and fruity taste and lasts longer than if you would use lemon juice instead.

Such salads are perfect for lunch at work, because there’s no need to heat  them.
