chickpea pancakes

preparation time: 10 minutes
ingredients (for 10 pancakes):
  • 80gram chickpea flour
  • 30gram spelt wholemeal flour
  • 160ml (sprinkled) water
  • 1tbs olive oil​
  • pinch of salt
Mix all ingredients in a bowl until well combined, take out 1tbs of pastry for each pancake and bake them in a pan with 1tbs heated olive oil at medium heat for one minute on each side.
These vegan pancakes are so simply to prepare and can be perfectly used as a snack thanks to their solid consistency. You can serve them with hummus, carrot spread or any other topping you like!
Good to know: chickpea flour contains a lot more proteins than usual flour!
