fennel apple salad

ingredients (for two servings):
  • 1/2 Fennel, washed and sliced
  • 1tbs olive oil
  • pinch of salt, pepper, chili
  • 1 apple, rasped
  • handful fresh mint, washed and chopped
  • 1tbs lemon juice
preparation:
  1. Mix fennel slices with olive oil, salt, pepper and chili and roast in the oven for 15 minutes at 200 degrees (400F°).
  2. Remove from the oven and mix with apple, mint and lemon juice.

Health benefits: Fennel and mint are both high in Vitamin C and iron, which are important for your health!

This salad is perfect for hot summer days. It’s fresh, fruity and crunchy thanks to fresh apple slices and almonds.
