green quinoa 

ingredients (for two servings):
  • 150gram quinoa (cook in water for 10 minutes)
  • 1 broccoli, washed and cubed
  • 1/3 cucumber, washed and sliced
  • 1tsp fresh ginger, peeled and chopped
  • 2tbs linseed oil
  • 4tbs lemon juice
  • 2tbs sesame mush
  • 2tbs water
  • pinch of salt, pepper, curcuma, curry, chili
  1. Cook quinoa in a pot with 300ml boiling water at low heat for 10 minutes.
  2. Cook broccoli in a pot with water at low heat for 3-5 minutes.
  3. Mix all dressing ingredients in a bowl and stir in quinoa, broccoli, cucumber and ginger.

Hey peeps! You might have recognized that I’m totally in love with quinoa… It’s super healthy and tasty and I love to use it for simple, fresh salads! Especially the combination of broccoli and quinoa is amazing! Have you ever tried it? If not, you should definitely try this recipe to find out how you like it! 🙂

What’s your favorite vegetable? It’s really hard for me to decide but I’d say my favorite is tomato. I love the juicy and sweet taste of tomatoes! I’ll probably use them for my next recipe. 😉 You can actually add tomatoes to this meal as well. You can add tomatoes to (almost) every meal, right? 😀

    Looks delicious!!!! Definitely want to try. Do you know what 150 grams translates to in cups? And what is a good substitute for linseed oil? I haven’t seen that in local stores.
