Leo’s Ferrero Rocher

ingredients (for 20 rochers):
  • 100gram dates
  • 60gram ground almonds
  • 2tbs almond mush
  • 2tbs cacao
  • 20 whole hazelnuts
  • 1tbs coconut oil
topping: ground hazelnuts
  1. Put the whole hazelnuts on a baking sheet and roast them in the oven at 180 degrees (360F) for 15 minutes. Rub off their skin with a blanket or either with your hands. Tip: It may be helpful to use some water. If it’s not working, you can try to peel them with a knife, but please be careful or you can put them back in the oven for some more minutes (avoid that they get burned)! 
  2. Mix all other ingredients in a food processor and blend them.
  3. Now you take out half a handful of the mixture, form a sticking pastry, put one roasted almond in the middle and form a small ball. Repeat this procedure until the whole mixture is used up. Tip: If the mixture is not solid enough, you can put it in the fridge first and wait for half an hour or even longer.
  4. If you’re done with the previous step, you spread ground hazelnuts on a plate and cover the balls with these nuts.
