oil-free pasta 

preparation time: 5 minutes
ingredients (for four servings):
  • 150gram noodles (e.g. fusilli)
  • 2 carrots, peeled and sliced
  • 1 bell pepper, washed and sliced
  • 100gram white beans, washed
  • 2tbs Tahin (sesame mush)
  • 4tbs lemon juice
  • 1tbs yeast flakes
  • 1tsp fresh chopped ginger
  • 1tsp curry
  • pinch of salt, pepper, cumin, chili
topping: 2tbs pumpkin seeds
preparation:
  1. Cook noodles in a pot with boiling water at low heat for 10 minutes.
  2. Mix all remaining ingredients in a blender until well combined, stir in the cooked noodles and spread out on two plates/bowls.
  3. Roast pumpkin seeds in a pan without oil and sprinkle on top of the pasta.

This pasta sauce is raw and so simple to prepare! Just grab your food processor, add all ingredients, blend and enjoy! While the noodles are cooking, you can already snack some spoons of the pasta sauce. 😉 

Even on hot summer days, you can easily store it in a lunch box and enjoy on the way. Last time I ate it was at the swimming pool, where I spent 8 hours with my friends, because it was actually the only place I could survive the extreme heat… Where do you like to spend your free time?
