pasta salad with avocado cream

  • 200gram penne
  • 75gram frozen spinach
  • 1 avocado
  • 1 clove of garlic, squeezed
  • 2tbs lime juice
  • salt, pepper and chili
  • 1tbs sesame
  • 2tbs olive oil
  • 1 onion
  • 1 bell pepper
  • 1 tomato
  • 50gram corn
preparation: in 15 minutes!
  1. Cook penne in a pot with boiling water and a pinch of salt for 10 minutes.
  2. Add spinach to the pot after 5 minutes of cooking.
  3. Put avocado, garlic, lime juice, pepper, chili, sesame and 1tbs oil in a vessel and puree.
  4. Peel the onion, slice the bell pepper and put both in a pan with 1tbs heated oil to steam it for 2 minutes. Spice it with salt and pepper.
  5. Wash and slice a tomato in small chunks.
  6. When noodles and spinach are done, drain off the water and put in a bowl.
  7. Add the steamed veggies, tomato and corn to the bowl and mix with the avocado cream.
