quinoa-cousous-salad

ingredients:
  • 100gram quinoa
  • 50gram couscous
  • 2 carrots
  • 1/2 aubergine
  • 1/2 kohlrabi
  • 1/3 cucumber
  • handful lamb’s lettuce
dressing:
  • 2tbs linseed oil
  • juice of 1/2 orange
  • 1/2tsp dijon mustard
  • salt, pepper
  • pinch of curcuma, chili, coriander
preparation:
  1. Wash quinoa and cook in 150ml water for 8 minutes.
  2. Souse couscous with boiling water and swell for 5 minutes.
  3. Peel carrots and kohlrabi, wash aubergine and slice in chunks.
  4. Cook all vegetables in a pot with boiling water at low heat for 2 minutes.
  5. Mix the dressing.
  6. Fill quinoa, couscous, vegetables and dressing in a bowl and mingle.
