ingredients (for two servings):
vegan, low-carb, raw and prepared in less than 15 minutes
- 1 carrot
- 1 bell pepper
- 1/2 cucumber
- 2 handful radicchio
- 1 handful fresh mint
- 2tbs lemon juice
- 2tbs peanut mush
- 2tbs soy sauce
- pinch of salt and pepper
preparation:
- Peel the carrots, wash bell pepper and cucumber and cut all veggies in thin slices.
- Wash and chop radicchio and mint.
- For the dip you simply mix lemon juice, peanut mush and soy sauce and spice it with salt and pepper.
- Serve the veggies slices and salad topped with peanut dip and enjoy this fresh and tasty meal!
Tip: Put the peanut dip in a bowl, so you can easily dip in the veggies.
