raw summer roll salad bowl

ingredients (for two servings):
vegan, low-carb, raw and prepared in less than 15 minutes
  • 1 carrot
  • 1 bell pepper
  • 1/2 cucumber
  • 2 handful radicchio
  • 1 handful fresh mint 
  • 2tbs lemon juice
  • 2tbs peanut mush
  • 2tbs soy sauce
  • pinch of salt and pepper
  1. Peel the carrots, wash bell pepper and cucumber and cut all veggies in thin slices.
  2. Wash and chop radicchio and mint.
  3. For the dip you simply mix lemon juice, peanut mush and soy sauce and spice it with salt and pepper.
  4. Serve the veggies slices and salad topped with peanut dip and enjoy this fresh and tasty meal!

Tip: Put the peanut dip in a bowl, so you can easily dip in the veggies.
