roasted sweet potato salad

preparation time: 25 minutes
ingredients (for two servings):
  • 1 sweet potato, peeled and thinly sliced
  • 2 small bell peppers, washed and thinly sliced
  • 1/4 red kale, washed and thinly sliced
  • 2 handful fresh mint, washed and chopped
  • 4tbs rape oil
  • 2tbs vinegar
  • pinch of salt, pepper, chili
  • juice of lemon
  • 50gram walnuts
  1. Mix the kale with a pinch of salt in a bowl and knead with your hands for 2 minutes.
  2. Add 2tbs rape oil, vinegar and pepper and set aside.
  3. Mix sweet potato and bell pepper in a bowl with 2tbs rape oil, salt, pepper and chili and spread out on a baking pan to bake in the oven at 200 degrees (400F°) for 20 minutes.
  4. Spread kale, mint, bell pepper and sweet potato over two bowls, sprinkle lemon juice and walnuts on top and serve it.
