steamed veggies

preparation time: 10 minutes
  • 2 carrots, peeled and thinly sliced
  • 2 parsley roots, peeled and thinly sliced
  • handful radishes (8 small ones), washed and cut in halves
  • 100gram mushrooms, washed and cut in halves
  • 2 cloves of garlic
  • 150gram Swiss chard, washed and sliced
  • 2tbs rape oil
  • 100ml water + 1tsp vegetable stock
  • 2tbs soy sauce
  • 2tbs lemon juice
  • pinch of salt, pepper, chili
  1. Steam all veggies (carrots, parsley roots, radishes and mushrooms) except Swiss chard in a pan with heated oil for 3 minutes.
  2. Add garlic, Swiss chard, veggie stock, soy sauce and all spices and continue the steaming process at middle heat for 2 minutes.
  3. Right before serving, add lemon juice and spread out the veggies on two plates.
  • Sprinkle some sesame on top of the veggies for a more special flavor and to provide your body with more proteins and healthy fatty acids. 
  • Serve the veggies with cooked potatoes, rice, couscous or flatbread. 

Well, I thought it’s time for a new meal that is low carb, healthy, simple to prepare and very delicious! I hope you’ll find all veggies in the store or rather at the fresh market. Not long ago, I always used frozen spinach for my meals, no fresh kale or spinach, but now I found out how amazing fresh greens taste and I’m sure they’re healthier than the frozen version. I’m coming to the point where I’d rather eat a salad as a snack than a piece of cake.
