sweet potato with banana almond cream

preparation time: 20 minutes 
ingredients (as a dessert for two servings):
  • 1 sweet potato, peeled and thinly sliced/rasped
  • 1tbs rape oil
  • 1/2 banana
  • 30ml plant-based drink (almond drink)
  • 25gram ground almonds
  1. Mix sweet potato slices and oil, spread out on a baking sheet and bake in the oven at 200 degrees (400F°) for 10 or 15 minutes until the slices are soft.
  2. Whisk banana, plant-based drink and almonds in a bowl and alternate layers of sweet potato and banana almond cream on two plates when the sweet potatoes are done.

That’s the reason why I come up with this recipe today and I really hope you enjoy testing it! If you like to can sprinkle some berries or nuts on top. I simply love the combine of sweet potato and almonds. Both have a slightly sweet taste and special flavor.
