tofu quinoa salad

preparation time: 20 minutes
vegan, low-carb, healthy and fresh! 
ingredients (for two servings):
  • 150gram quinoa
  • 200gram tofu, chopped
  • 2tbs peanut/rape oil
  • 2tbs soy sauce
  • 2tbs peanut mush
  • 2tbs lemon juice
  • pinch of salt, pepper, chili, ginger
  • 1/2 cucumber, washed and chopped
  • 1 carrot, peeled and rasped
  • handful fresh mint, washed and chopped
  1. Put quinoa in a pot with 375ml salted boiling water and cook for 15 minutes at minimum heat.
  2. Steam tofu and garlic in a pan with heated oil for 2 minutes and add soy sauce, salt, pepper and ginger afterwards.
  3. Mix soy sauce, peanut mush and lemon juice and steam together with tofu in a pan with heated oil for 3 minutes at medium heat.
  4. Season with salt, pepper, chili and ginger and mix in a bowl with cucumber, carrot, quinoa and mint.

Well, I love to use tofu, cucumber, carrot and mint as a filing for vegan sushi and when I prepare summer rolls, I usually dip them into a creamy sauce made of peanut mush, soy sauce and lemon juice, which you can check out in my recipe “raw summer roll salad bowl”. Peanuts, soy sauce and lemons are such a great combination! That’s why I created this tasty tofu quinoa salad for you!

The benefits of quinoa are that is has less carbs than rice e.g. and it’s packed with many plant-based proteins. Besides, its preparation takes 15 minutes only (compared with 40 minutes for wholemeal rice).

This vegan salad is perfect for warm summer days and can be easily prepared to take with you on your next journey!
