vegan curry fried rice

 ingredients (for two servings):
  • 100gram cooked wholemeal rice
  • 1 spring onion, washed and chopped
  • 1 clove of garlic, peeled and squeezed
  • 1 carrot, peeled and chopped
  • 1/2 bell pepper, washed and sliced
  • 150gram mushrooms, washed and sliced
  • 50gram cooked peas
  • 50gram cooked (green) beans 
  • 1tbs peanut oil
  • handful washed, chopped coriander
tofu scramble:
  • 1tbs peanut oil
  • 200gram tofu
  • 1tbs soy sauce
  • 1tsp fresh chopped ginger
  • 1tsp curry paste
  • pinch of cayenne pepper, curry, chili
topping: fresh coriander, sesame
tofu scramble, greens, veggies, rice and herbs!
preparation:
  1. Tofu scramble: Mix soy sauce, curry paste, ginger and the spices in a bowl, add crumbled tofu (use a fork or your hands to crumble it and press out the water first) and steam scrambled tofu in a pan with heated oil for 2 minutes.
  2. Remove it from the pan and steam the veggies in 1tbs peanut oil for 2 minutes.
  3. Add spring onion, peas, beans, wholemeal rice, tofu scramble, coriander and 100ml water to continue the cooking process for two more minutes.
  4. Season with salt, pepper and chili and serve in two bowls topped with fresh coriander and sesame.

Did I already mention the importance of variation? A healthy diet doesn’t mean you have to miss out on something. There are so many healthy plant-based ingredients that are good for your body and provide you with essential substances. However, you don’t get all essentials by eating noodles or rice with tomato sauce everyday. I guess that’s obvious. Try to use different kinds of vegetables, fruits and grains –  You can’t go wrong with that!

Usually I try to use as few ingredients as possible to reduce the expense for you. But still I’m looking for healthy meals, so I compromise. I create recipes that are simple and don’t use many ingredients. That means you should vary the meals. Oats for breakfast, rice for lunch, quinoa in the evening – served with different kinds of veggies, fruits, nuts, herbs, etc. Do you think I’m going well with creating varied meals?
