vegan dessert

ingredients (for two small jars):

with plums:

soy curd with plums
  • 2 dried dates
  • 6 walnut kernels
  • 2-3tbs soy curd
  • 1 plum
with berries:
  • 2 dried dates
  • 6 walnut kernels
  • 50gram frozen (or fresh) berries
  • 2-3tbs soy curd
  • planed almonds

preparation:
  1. Put the dried dates in a bowl with water and let them swell for 10 minutes.
  2. For both versions you blend the dates and walnut kernels in a food processor. (Add some water in case the mixture is too dry.)
  3. Spread the purée on two jars.
  4. For the plum version you add soy curd to the jar. Top it with a washed, chopped plum.
  5. For the berry version you simply blend berries and soy curd in a food processor and add to the jar. Top it with some planed almonds. (You can roast the almonds  first, in a pan without oil.)
This recipe can be perfectly used as a small present for a beloved person as those jars look really cute. I’m sure you bring great joy to the person who receives them. Thanks to the dates and curd you don’t need refined sugar to sweeten this dessert.
