vegan „pho”

ingredients: (two servings)
  • 1 clove of garlic, squeezed
  • 1tsp fresh ginger, chopped
  • 1 dried chili, sliced
  • 1/2tsp curry paste
  • 1/2tsp cinnamon
  • juice of 1/2 lemon
  • 1tbs oil
  • 800ml water
  • 1tbs vegetable stock
  • 120gram rice noodles
  • 2 small carrots
  • 1 green onion
  • 50gram mushrooms
  • 50gram smoked tofu
  • handful fresh cilantro
  1. Put garlic, ginger, chili, curry paste, cinnamon, lemon juice and oil in a pot, mingle, bring to the heat and steam for one minute.
  2. Add water, vegetable stock and rice noodles and let them cook for 10 minutes.
  3. Wash green onion and mushrooms, slice carrots, squeeze tofu and slice all ingredients. Add to the pot after 6 minutes of cooking.
  4. Fill a bowl with the „pho“ and top it with fresh cilantro.

Pho is one of the most famous traditional vietnamese meal and as one of my vietnamese friends told me there doesn’t exist “vegan pho”. I know it’s just a variation of the tradition. However I wanted to test if it tastes without meat as well – and yes, it definitely does! 🙂 It’s a simple noodle soup with vegetable stock, carrots, mushrooms and tofu – Actually you can add any veggies and spices you like!
