ingredients (for four small pancakes):
- 50gram oats
- 15gram ground almonds
- 1tsp cacao
- 1tbs linseeds
- 1/2 banana
- 125ml oat drink
- 1tbs coconut/rape oil
- Blend all ingredients in a food processor and bake the pancakes in a pan with heated oil for 2 minutes on each side.
Tip: Serve the pancakes topped with almond mush and heated berries or other fruits and nuts you like.
I guess that all of you have tasted pancakes before. Especially since I have been blogging, I have seen a lot of pancake recipes! Almost every channel is filled with them. So what’s special this time? When I create new recipes, I always focus on the health aspect. I use ingredients that are good for your body and provide you with energy instead of using it up.
I wanted to create pancakes on another basis than flour, so I used oats this time. I’m quite addicted to oats – You too? Usually I enjoy simple oatmeals for breakfast, but when I’m in the mood for pancakes, I love to prepare those too. In my eyes you don’t need to add sugar to the pancake pastry and you don’t need a heavy chocolate sauce topping. You might have already recognized that I completely avoid refined sugar. I sweeten my meals with dates, bananas, nuts or syrup. Yes, for me almond and cashew mush have a sweet taste. I love to add them to my pasta sauces or to use nut mush as a topping for vegan lasagne and pizza. Well, actually I add nuts to at least one meal per day. They are rich in unsaturated fatty acids, proteins and fibres and have a lot of health benefits!
To cut a long story short: These oat pancakes are sweet, healthy, vegan, prepared in 5 minutes and taste really good!
